Just had this last night and it was YUMMY, I promise:

Cucumber Soup by Galya, my bulgarian sista from another mista

2-3 cukes, mostly peeled, grated
handful of pecans but she usually uses walnuts
garlic to taste, chopped
fresh dill to taste, chopped
a large container of plain yogurt (12oz?)
a bit of olive oil
2-3 cups of water

Combine the first five ingredients. Stir in the yogurt with a bit of olive oil (about 1/4 cup). Start adding water until the consistency it to your liking.

She also suggested making this a spread: Squeeze out most of the water from the grated cukes and then combine them with the nuts, garlic, herbs, 1/2 yogurt and 1/2 sourcream. This can be spread onto a pita chip for example or celery sticks.
