Slim Jims, jerky, nuts, cheese sticks, etc.
Last time I flew, I found a couple of bags of turkey pepperoni that didn't need to be refrigerated until opening. I took one bag for there and one for the flight back. They are supposed to be refrigerated after opening, but each bag was two meals worth and I wasn't too worried about 3-4 hours of opened time after breaking into the bag. Oh, bring a mint...
Also, lots of fancy cheese is sold at room temp at the market. I assume it's fine until opened up, too (and for 3-4 hours afterward. It's cheese for God's sake... ). These cheeses are pricier, but pretty tasty. Bring a mint...
Most of the time, you can by some fruit at the airport. I know it's not TNT compliant, but I usually make an exception for an apple instead of my veggies when I'm traveling. Raw veggies are harder to find.
