Cottage Cheese "Ice Cream"
I've been playing around with my ice cream maker. With my kids, I make regular stuff, but when they're gone, I experiment.
Here's my latest. I like it, but I love cottage cheese. It might be an acquired taste, you know?
Chocolate Bourbon "Ice Cream"
Makes 2 servings
2 cups large or small curd cottage cheese
2 eggs
1 tbsp light olive oil
1 tbsp bourbon
4 tsp cocoa powder
1 tsp vanilla extract
3 packets of Spenda
3 packets of Equal
Put all this stuff in the blender and blend until VERY smooth, then blend a little more. Then, do what you do with the ice cream maker to make it into ice cream.
It was pretty good right out of the machine. Perfect texture, just like soft serve ice cream.
Per serving: 377 calories, 22g Fat, 8g Carbs, 1g Fiber, 33g Protein, 3g Alcohol
