wow, thanx for the replies guys, it doesn't look as complicated as I thought. My wife loves fajitas, and she has a great recepie with chipotle peppers, so I think we'll be doing that as a staple for lunch/dinner.
I just found a great deal on fresh fish fillets at Sams club, along with some great wild caught salmon, so it looks like it'll be a seafood dinner for the week
