Go for it. Barring any lactose issues, they should be fine. However, just like the Tyson chicken patties, go ahead and check the ingredients. There are dozens of different brands. Just make sure you don't grab one with extra additives. It shouldn't be very difficult to find a brand that doesn't have anything questionable.
As for the fat content: it all depends on your caloric guidelines. If you're trying to get bigger, getting the full-fat sticks may help you get your numbers up. If you're trying to lose, then going with the low-fat version may be helpful. Either way though, you could fit it into your diet if you want (in other words, get your cals from somewhere else if you want, or get them from your cheese sticks.).
