I have worked with an number of organisations to help improve the levels of employee fitness. One of the best things we have done and had very positive feedback from is the use of swiss balls and bands, so i back you up on that one JP.
ANother thing we have done is to set up walking routes, so a lunch employees are encoraged to walk to the shops to get some food (directions to a healthy shop only, i might add!), this can for some add 1/2 a hour of activity to their day! We also look to encorage people to get up out of thier chair, walk around and use the stairs over the lift (Here in the UK though the buildings are a little smaller than some of the ones you have in the US!)
