There is plenty of information showing that older people adapt to strength training later in life.
Here is some info from an old study by Charette et al (1991) in the Journal of Applied Physiology.
They found that 12 weeks strength training of knee extensors resulted in strength increases raning from (28-115%) and increase in hypertrophy, as measured by an increase in the cross sectional area of type II fibres (20.1%). The matched control group had no changes in either strength or size.
The mean age of these subjects was 69, however there have been studies showing the effectiveness of strength training right up to and beyond 85 yrs of age.
The good thing about these studies is that it is never to late to take up training as increases in strength and size have been associated with increased mobility and functional ability in the older population.
