(I also had a pot of homemade black bean soup on the stove -- black beans, pinto beans, tomatoes, and tomato juice, plus seasonings.) When the tortilla was nicely grilled, I plopped it on a plate, topped with a mixture of 1/2 cup lowfat cottage cheese and 1 cup of the bean soup.
YUM! And packed full of protein and fiber!
