I always soak mine overnight. Pick through them for non bean items, rinse well, put in a large pot of water. Bring to a boil, turn off the heat then let 'em soak away.

Some folks say to put a TINY amount of baking soda in the water, which will soften the skin of the beans. I don't do this, I think it makes them soft. I've used kombu (a seaweed) in mine before, I think it helps if you're in a pinch. Since I've started buying dried beans at the health food store I've not had the gas problems.

The vegetarian chili I make...no amount of soaking is gonna make that toxic mix gas free.
