Actually with sunny side you can flip them - over easy. Enough to set the yolk but not long enough to kill it. Some places will do sunny side up so the more cooked (hence brown) side of the egg is down but the white side is up. Other places won't flip them at all (I cover mine with lid for a couple of minutes to set them).
