after weeks of research and experimentation, I've developed the revolutionary sunny side up spinach omlette. For my favorite JPFitness friends, this recipe comes free of charge, with no spam and less than 20,000 words
recipe:
3oz baby spinach chopped and zapped in micro for about 1min to reduce volume (or sauted, but I find microwave easier)
chopped onion
chopped mushroom
2 eggs
mix 1 egg with the veggies. Pre-heat and grease pan (I use canola cooking spray, you pick your fav--butter, olive oil, etc). When pan is hot, add egg mixture and spread like an omlette. Crack 2nd egg on top. Carefully integrate whites of 2nd egg into omlette, just enough to keep it from sliding off when you flip it. When cooked on bottom, flip, cook, and enjoy

PS you really need to use the whole egg for the sunny side up. I tried mixing 1 egg + the whites of the other but the yolk doesn't fare as well without that slight layer of white on top.
