I have found that low carb bars successfully include nuts, protein powder, dry coconut flakes, flax and eggs. You can experiment with any of those.
Very simple:
1 cup nuts
4 scoops protein (casein is best)
Mix in a bowl, sowly start adding water until the mixture becomes thick and pasty.
To make more complicated add 2 eggs and any of the dry ingredients above to make it thicker: milled flax, coconut or raw bran.
They bake fast, too!
