Mango Avocado Salsa (6 servings ~1/2 cup each)
1 large mango, cut into 1/4" cubes
1/2 Haas avocado, cut into 1/4" cubes
1/4 cup frozen corn, thawed
1/4 cup finely diced red onion
2 tablespoons fresh lime juice
1 tablespoon fresh chopped cilantro
Mix well, set aside while preparing the rest of your meal, serve
It was quite good. Found it in our local newspaper last week.
