That's the sort of thing I do. I have an SUV so I have the capability also of plugging in a cooler and keeping extra things cool but on average days, just the ice packs you can find at walmart work well. Salads, Various sources of protein such as nuts, seeds, cheese, eggs, turkey, chicken, etc work extremely well. I like to also include protein powder, sometimes homemade protein bars etc. Don't forget your green tea bags - at conferences there will be hot water to brew it. You might need it to stay awake. The possibilities really aren't that bad at all. The key thing is to plan ahead.
From January to May I was working all day and then driving 75 minutes one way to a class, sat in lab for several hours and then drove 75 minutes back. I can definitely understand your situation. It is totally doable. If you have any other specific questions, lemme know.
