Default Wild Salmon Salad

This one turned out great - just finished some for lunch with a salad.

Wild Salmon Salad

Ingredients:

SALMON, ATLANTIC WILD – 1 large can (14.75 oz), drained & bones/skin removed
PICKLE, DILL – 2 small, diced
MAYONNAISE, CANOLA, LIGHT, EGGLESS – 1/4 cup
LEMON JUICE - 1 tbsp
SOY SAUCE (KIKKOMAN) - 1 tsp
CAYENNE PEPPER - 1 pinch
FISH RUB* – 1/2 tsp, or to taste

Instructions:

Drain the can of salmon, put into a large mixing bowl, and remove the larger bones and skin. Add the remaining ingredients and stir with a wooden spoon until thoroughly mixed. Store in the fridge in an airtight container for up to three days.

Makes 3 servings.

*Use your favorite pre-mixed fish rub, or mix together the following: thyme, oregano, mint, fennel seed.
