You don't really taste the veggies. Like zucchini bread or carrot cake. You know it's there, but the taste isn't really squash or carrot.
A bit of baking powder (not soda) will make them slightly less dense and more like a muffin. Not as light as one with flour, but a little better.
They are sweet-ish, yes. The whey powders are all sweet, but not sweet enought without a bit of sweetener.
