I make that something like that chicken at least once a week - but without the breading (I'm LC right now). Just start seasoned boneless skinless breasts with a slight bit of marinara so they don't dry out - then more marinara, mozz & parm to melt & brown just a little - perfect. Left overs are good for lunch too.
