Only my opinion, but I've done this routine and so here's my advice:

1) Yes, substitute, but not seated - works different area than the intended muscle. Leg press? Sure.

2) Do as many as you can. You'll work your way up. I'd skip the pulldown altogether.

3) Yes.

Good luck. Remember, just my opinion. Take it for what it's worth = exactly nothing. ha!
