Why not a deadlift or row of some kind instead of the step-up? Seems to me that the step-up is a redunancy of the squat and lunge, taking up a valuable spot that could/should be filled by a pull.
What do you all think?

I completely agree that the deadlift shouldn't be neglected, it is a different movement pattern. The deadlift is a function that people perform every day as often as the squat and watching a client try to deadlift is a great analysis tool, in terms of finding tight and/or weak muscles.
