Apricot Beefcake

Gas 4 , 180 deg C 40-45 mins

Turn on Oven. Set at gas Mark 4, 180 deg C

Kit

Scales
1 Plastic mixing Bowl
Fork
Plastic Spatula
Scissors
17cm Base measurement Square OR 19m Base measurement Round Non-Stick Shallow Baking Tin

125 g Self Raising Flour
25g Castor or Granulated Sugar
1 tbsp Sunflower Oil
240g NO NEED TO SOAK Dried Apricots

Method

1) Weigh 125 g Self Raising Flour into Bowl
2) Add 25g Sugar.
3) Add 240g of Apricots to Bowl, cutting in half or quarters with scissors before dropping in.
4) Add 1 tbsp Oil
5) Add 100 ml water and mix everything together with Fork until no dry lumps remain - the
mixture will be wet and sticky.
6 ) Scrape into tin and spread over base with Palette knife.
7) Put tin on middle shelf of Oven and Bake 40 -45 mins.

8) Remove from Oven and run knife round edge of cakes to free edges.
9) Cool, and give a quick shake to release bottom of cake from tin.

Notes : Any Oil may be used, Sunflower, Vegetable and Corn have mild flavour.
Oils such as Olive or Flax Seed will impart their own flavour to the cake.
Use Demerara or Molasses sugar to vary the flavour.

Good flavour variations include 1,2 drops of Vanilla Essence, ½ tsp Cinnamon Power, ½ Mixed spice


Eat spread with Quark, Low Fat Soft Cheese, or Peanut Butter for Bulking
