aubergine salad
I thought I'd share a favorite recipe I made last night.

We call this "Carna" salad. It's a great summer salad with many flavors.
You need:
1 aubergine (sliced into long slices, 1/4 inch thick)
2 large ripe tomatoes (peeled and sliced thin)
3 oz white cheese (Feta is best, you can also use goat's cheese)
1 handful crushed walnuts
4-5 leaves of mint, chopped
2 tbsp olive oil

After cutting the aubergine, soak it in water with some salt for about 5 minutes. This wil get rid of bitterness. Dry the aubergine and use one tbsp of olive oil to coat it and then put it on the grill. Grill till cooked. Lay the bottom of a plate with the grilled aubergine. Place peeled tomatoes on top (to peel, soak in hot water for a minute). Sprinkle crumbled cheese and walnuts and top with mint and olive oil.
p.s. If you don't like aubergines, you can use zucchini instead
