I've heard that about flyes too, and regardless of whether or not its true you dont HAVE to do them. Benching is in my opinion a much better exercise to focus on, but make sure you're switching it up (dumbbell/barbell, decline/flat/incline) don't do the same kind each workout. Also, definition comes from diet, not from which exercises you are doing.

Maybe I am sticking my nose in here but what you need is what the other guys are saying a full body workout. Try doing pyramid sets, and you must work all parts of the body (yes that means squats!!) Incline bench, flat bench and flyes is all you need, no decline. Make sure you alternate week to week between dumbell and barbell (id you do incline dumbell next week you do incline barbell. When you insline do not do a huge incline 30 to 40 degrees is more that enough. Also if you work your front delts into your routine you will start to see that definition you are looking for.
