it doesn't matter where you want the muscle to be, you have to work your whole body. If you don't you will create imbalances which can lead to poor posture and injuries, among other things. If you want your chest to grow thats fine, but make sure the rest of your body grows with it.
I've heard that about flyes too, and regardless of whether or not its true you dont HAVE to do them. Benching is in my opinion a much better exercise to focus on, but make sure you're switching it up (dumbbell/barbell, decline/flat/incline) don't do the same kind each workout. Also, definition comes from diet, not from which exercises you are doing.

And major action will certainly make you feel a bit uncomfortable, which is absolutely fine. You've gotta get excited about feeling uncomfortable, you've gotta love feeling slightly uncomfortable, because you know that you're stepping outside the boundaries that you used to create.
