I used to buy 24oz cans of McCann's Irish Oatmeal for about $6, until I found that I could buy bulk steel cut oats for $.99/lb at a health food store.
Toasted oatmeal (I live at 6,000ft, cooking time might be significantly less at lower elevation)
Melt 2 tbsp butter in a deep heavy skillet or pot.
Add 1 cup steel cut oats, stir to coat all the kernels with butter.
Heat over med-high heat until the oats brown and start to smell good and toasty, you'll hear them popping and cracking too.
Carefully add 4 cups boiling water to the pot and stir for a couple minutes.
Reduce heat to medium and simmer for 35 minutes without stirring.
Add 1-1.5 tsp salt and stir, continue cooking until desired consistency is reached, about 5-10 more min for me.
Toasted oatmeal is good sweet or savory, the little bit of salt during cooking just brings out the toasty flavor better.
