Doesn't anyone else like savory oats? I eat my oatmeal with fried eggs all the time, or with some green chili, or both. Don't really care for sweet stuff in my oatmeal.
Melt a little butter in a small skillet. Add 1/2 to 1 cup of cooked oats and spread evenly. Crack a couple eggs on top of this and cook until the whites start to set up. Then slap a lid on it to steam cook the tops of the eggs. Serve with green chili, hot sauce or some of my wife's roasted red pepper and jalapeno jelly.
