That curry sounds really good, except I would eat that entire recipe myself!

I eat stir-fried vegetables all the time with a Thai twist that's pretty easy. I just use frozen stir-fry veggie mixes. Wal-Mart has some really good ones that are only about $1 per bag. I stir fry them with some salt, ginger, and chili powder, and add some lime juice in toward the end. This Summer, I grew Thai basil in my vegetable garden and throw that liberally into the mix when I have it. I eat it either just with veggies or stir-fry chicken or another meat before adding in the veggies and spices. Lately, I have just been cooking the veggies alone, since my in-laws (Hurricane Katrina refugees) have been handling most of the dinner cooking. They usually provide the protein, and I supplement with veggies, since I eat more of them than everyone else in the house combined.
