I am so enamored with this recipe from TrainingGirl. It actually tastes like cheesecake! My kids ask me for it, it is that tasty. For those, like me, who have their sweettooth, this is it. My preferred way to eat cottage cheese now (OK, I skip the topping, mix with a spoon, and don't let the pudding set and it still tastes good)
Here is what I always make...tastes like blueberry cheesecake..mmmm
1/2 cup low fat cottage cheese
2 tsp sugar free/fat free dry vanilla pudding mix
1 Tbsp skim milk
Mix all of the above in a food processor or blender until smooth. Refrigerate for about 1/2 hour to let the pudding set.
Topping:
1/2 cup fresh blueberries
1 tsp lemon juice
1 to 2 packets of Splenda
Cook this on the stove over medium heat, stirring continuously, for about 8-10 minutes. The juices will come out of the blueberries and the mix will remain a bit chunky. Be careful not to overcook. Let cool and pour over top of your cottage cheese mixture.
