A lot of specialty cookbooks have far fewer recipes than this book does. It's really only the Joy of Cooking and Better Homes and Gardens styles, etc. that have a ton. Plus, many of those are compiled over years and republished (sometimes directly from those in their magazines) into updated versions of the book.
As to the price, I'd guess that if this one is popular enough and can get picked up by a paper book publisher, that you might see a fleshed out version for less than this ebook version. Who knows...
It's got a lot to do with anticipated volume of sales. It's got to be pricey enough to be worth it for the author and/or publisher to make it worth their while.
With a book like this, they'll get about as many sales at $30 as they would at $20. A few less, but not that much less. The more "fitness focused" probably will buy it, as long as the price is at least reasonable. IMO, of course...
There are short run, hardcopy book publishers that are now available for both self-publishers and small runs for the "bigger" publishers. They use high speed lasers and such. But, it's still pricey unless you have at least a decent volume going out hardcopy.
