I tried this over the weekend and it was a hit in my family. So thought of sharing the recipe with a bigger crowd. Hope you enjoy making it and enjoy the taste of it as well.
Ingredients:
1/2 cup grated carrots
1/2 cup grated cabbage
1/2 cup grated cauliflower
1/2 cup grated capsicum
1/4 cup grated radish
1 tsp chopped garlic
1 tsp roasted cumin seeds
4 cups wheat flour
salt to taste
Mix all the ingredients together well. Add water and knead well to make a nice smooth dough. Add 1/2 a spoon of oil(optional) to make it smoother. Make small balls and roll them out in small circles. Put one by one on a preheated pan and cook both the sides evenly on medium flame. The paratha is done when you see small dark brown spots on the body.
Optional: You can smear a tsp oil on both sides of the paratha. But it tastes yummy without this additional oil also.
Serve with Raita recipe below:
1 cup yogurt
1/2 cup grated cucumber
1/4 cup finely cut onions
2 tsp chopped coriander /cilantro
salt
1/2 tsp roasted cumin powder
1 pinch sugar
Mix all the above but not the salt and refrigerate for an hour. Mix the salt right before serving.
