"I Hate Celery" Tuna Salad
(Serves 1-2, depending on the size of the bread)
1 can tuna, drained well
1-2 Tbsp grated carrot (about a half carrot)
1-2 Tbsp grated cucumber, seeds and excess water removed
2 scallions, chopped fine
1 Tbsp Low fat mayo
Salt and freshly ground pepper to taste
Combine ingredients. If I have radishes on hand, a bit of finely grated radish is a nice addition (but it's not worth buying a whole bag of them). I usually eat this as a sandwich on whole wheat bread.
If you're feeling like calories don't matter, this also makes a great tuna melt (add a slice of your favorite cheese, butter the bread, and grill it).
